How do you make those cameras focus continuously at the subject? When the camera is hand held, we might use AI SERVO but how/what software is used in this case to keep the cameras focussing perfectly all the time?

that’s a much better use of bullet effect and way more creative editing.
Rip Curl and surfers should have a look at other extreme sports movies, they will discover there is loads of creativity aroun them too.

Go to YouTube and search for “time freeze Matrix effect” Lots and lots of amateur videos.
