On my last trip to Vancouver, I was met with one of the best sunsets I've seen in years. I figured the image I took was a good example to show how taking time to process an image can enhance it.
The first image is the raw file, and the second one is the processed image. I didn't do anything fancy. I just made the usual adjustments to bring the image to life.
One thing I always stress to new photographers is to visualize the finished image, as cameras don't quite see light and colour the same way we do. Believe it or not (and if you've been to Vancouver you'll already know this) the processed image looks much closer to the actual sunsets we get in Vancouver than the raw image.
I have a similar image with the sunrise, so perhaps I'll put that up when I have more time.

Yeah, it's admittedly more magenta than I'd usually go for. I think that happened when I raised the shadows in the city a little too much. That being said, the natural sunset
in Vancouver is also ridiculously colourful. I might go back and tinker with it some more, but so far it's been one of my more popular images on Facebook, so perhaps it's appealing the general public this way, haha.

He's a quick fix of the colour on the buildings. I prefer this over the original for sure.
That's better, Jordan. I agree with Mr Cole, but we're not from Vancouver, so what would we know? :-)
