Level od post-processing

Hi all, I am a complete amateur who is not absolute amateur: long time ago I was very interested and started serious engagement in classic photography, but had given up for excessive costs of laboratory supplies.

Until recently I had not time to delve into visual digital world, but once I did it, I discovered that my interest is still alive.

So I have to learn many new things and would like to ask experienced people some simple questions.

I read a lot about post-processing recently trying to learn basics on steep curve.

So, my simple question: if I take picture of some completely hazy sunset, would you dehaze it at all? I believe there are enough interesting elements even without dehazing, and so should I leave the main feeling as it was in reality?

Similarly, I take some nature photo where yellow colour absolutely dominate. So why would I try to balance colours if the colours imbalance is what it was in reality?

I'm aware that some professionals need to make their images idealistically perfect because that's what clients ask for, and pay for, but would you recommend some clear separation on what needs to be done and when?
