I was reading how in many sports, photographers will raise the ISO and increase the shutter speed. I had tons of light that day but the real challenge for me was the focus. Anyone have tips on when to shoot and when to focus the moving subject? CC of course is welcomed!

Shots look good! Most modern dslr cameras shoot super clean at pretty high iso, so raising the iso up to get a faster shutter speed is no problem. I dont see any motion blur in your images so I dont think you would have benefited from a faster shutter speed.
For the Focus, were you using a continuous Focus (af-c or AI-Servo) to help track the moving subject?
I do believe I was on AF-S, thats my biggest challenge as of now. Figuring out when to focus (before the stunt takes place overall, or moments before the actual stunt)
Switch to AF-C and let the camera track the moving subject while you hold a half press of the shutter button, should improve your keeper rate!
