Any suggestions would be greatly appreciated on the proper use of these cool devices. For example, how would I get the ring to appear larger in her eyes or to take up more of the eye?
I've used ringlights several times and it's really something that depends a lot on the subject and lens you choose. Honestly I can't get past the little rings in peoples eyes.
I wonder if your issues is mainly the proximity to the subject as the light is a little hard and the ring is small in catch light.
There are two things i would try, one is try a shorter/wider lens and see if this gets the light you want ( i know the lens might not be flattering on a face) and the other would be try a large diameter ring light -- but that likely mean borrowing or buying, hence it being the second option. But if the first works ( letting you get closer and therefore the light source seams softer and larger, and you know you want to use a longer lens, then you'll know a larger ring might be worth adding to your kit.
