Pain au levain is the quintessential artisan bread. Naturally leavened, crusty, slightly sour and speckled with a good amount of whole grain. It pairs well with anything, toasts like a dream and when made well remind you of the bread you enjoyed as a child (especially if you were a child born in Europe).
