Doukhobor Borshch is a very specific type of Borshch unique to the Doukhobor people. It a farm-to-table dish that is always vegetarian and uses a lot of heavy cream and butter to keep people warm during harsh winters. Unlike other forms of borshch, tomato is used in abundance for colour and flavour, while only a single beet is used for a hint of flavour and removed at the very end.
