I would perform focus stacking to get both the very close foreground and the background in tack sharp focus.
While doing focus stacking, the frame for the foreground would've been exposed properly, so you could have more detail and a brighter ( not fully bright, you'll have to tone down the luminosity to keep things real, can't be too bright according to your scene and then sun's position ).

Hey thanks for the tips! This is something I would like to start trying. Lately I have been bracketing/taking multiple exposures (not here unfortunately) but can't seem to produce anything satisfying in photoshop (just more practise I suppose). Any videos you could recommend on the topic? I would love to buy the new Landscape Video with Elia, but with the worthless Canadian Dollar, $299 USD is a bit daunting at the moment!

Take a look at Jimmy McIntyre's guides for blending using luminosity masks ( shutterevolve.com & his youtube channel ), it's a pretty solid guide to get you started ;)
