Date palm sap, a winter delicacy in Bangladesh, is a sweet, natural extract collected from date palm trees. Harvested early in the morning, the sap is consumed in the pot and within hours of collection to preserve its natural sweetness and delicate flavor. During a visit to Kaliganj village, I witnessed a hard working labour was preparing it amid mystic smoke—a truly unforgettable experience. For locals, winter feels incomplete without this wild juice, deeply rooted in their culture and tradition. However, with declining date trees and fewer people pursuing sap harvesting, this heavenly tradition faces the threat of extinction.
