Swedish meatballs rösti waffles
2 portions
For the rösti waffles
200g grated potatoes
1 onion (diced)
1 egg
5 Swedish meatballs in small chunks
1 tsp. lemon zest
juice from 1/2 lemon
some pepper
2 tbsp. flour
For the meatballs
5 Swedish meatballs
1 tsp. lemon zest
juice from 1/2 lemon
1 tbsp. oil
To garnish
-some parsley
lingonberry jam
cream sauce
In a bowl mix together the grated potatoes with the onion and egg together. Add the meatballs, lemon zest and lemon juice to the mixture with some pepper. Sieve the flour on top and mix together until combined.
Heat up your waffle iron and spray in with a good amount of cooking spray. Bake about 2 tablespoons of the batter for one waffle.
