Sweet potato pancakes with caramel syrup

Sweet potato pancakes
2 portions

Ingredients
150g sweet potatoes
2 egg whites
60g low-fat quark
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. cinnamon

For the bacon
6 slices of bacon
6 pieces of paper towels

Instructions
Peel the potatoes and chop them in small pieces. This will reduce the cooking time. Heat up a pan with bowling water and cook the potatoes for about 8 minutes. Rinse them off with cold water and mash them with a fork. Let it cool down a little in the fridge. Add the cinnamon, baking soda and vanilla to the mashed potatoes and mix together.

Add the egg whites and quark to the mixture and mix till you’ve got a nice batter. Grab a non-sticking pan and spray it in with cooking spray. Bake about 12 small pancakes from this recipe. Bake on medium heat until they have a nice golden brown color. Flip them over and bake until also golden brown.
