Can anyone give me advice on post processing with this one?
I'm not sure about how to make my mom's eyes pop and the best way to correct exposure. I'm using GIMP.

here's a quick guide on eye enhancement specifically, in gimp:

however I would recommend also making other adjustments to the exposure and white balance at least. from there, you can better determine how much eye enhancement you might need
There is a blue tint you should be able to remove. And "pooping" the eyes will be tougher since the frames are in focus instead of the eyes.
