One tool I am a huge fan of is JPEGmini. Its entire purpose is to reduce the file size of images without affecting their quality, and it does an absolutely fantastic job. I run all my portfolio and client photos through it and frequently see 50-75% reductions in file size with no discernible change in image quality.
