Compositions are something a lot of us struggle with a bit, especially since they are not as easily codified as something like what shutter speed or aperture to choose. They can be particularly tricky in landscape work simply because unlike any genres, we do not get control over the elements in the frame. Personally, I have always tried to minimize things in the frame, only including the elements that absolutely add to the frame. One thing that can help with this is simply bringing a longer focal length along with a standard wide angle lens to help you isolate smaller bits of the scene.
