I thought I would try out my 50 year old lenses: Canon FD 50mm f/1.5 SSC and Canon FD 28mm f/2.8 on my Canon R5 with the use of the appropriate adapter.

I think that you pretty well nailed this in camera but there are a couple of things you could have don in post.
Reduce the highlights on the forehead, shoulder, and nose.

I personally do not dislike the hightlight in the skin, probably in the headwear, so it is even but that would have to be done in camera.
More background separation.
Anf fix the blood veins in the eyes.
