Luminosity masks are a quick and powerful way to make selections in an image, as they allow you to segment the photo based on different brightness levels. This allows you to, for example, add a bit of warmth to the highlights of a landscape photo. If you look at Morganti's sample photo, you can see how complicated it would be to make the mask manually, as it would require you to work around and between the leaves on the trees and to deal with the vastly complex reflections on the surface of the water. Yet, what would be a tremendously intricate mask can be done with just a few clicks, which is why so many photographers rely on the technique.
