Great video, all the best for the back surgery. I have been a long time D850 user and more recently a Z7 user. I love both. I love the weight of the Z7 (or lack there of), but do not like the lack of a sensor cover. The lack of the second card slot has never been an issue for me, but it only takes one failed card to make a bad day. So I did order and received a Z8 last week and took it on a quick trip for 2 days of photography. It is indeed a D850 replacement. The added benefit is the (what I consider) better lenses on the Z platform. As you mention, using the menus is a breeze if you are a current Nikon owner. The sensor is nothing short of sensational, the feel of the camera in the hand is great. I look forward to many great adventures with my Z8.
