I am just not sure if this is "soft light". But I do know I like this picture as I shared it in my portfolio. Took it years ago when riding on my bike trough the Goudse Hout, Gouda, the Netherlands. The clouds were kinda dark, rain was coming, but also the sun shined a bit and so this was what happened. I can't remember the settings I've used as it's quite some time ago that I took this picture. But I wanted to share and hope it's good enough.

The light is pleasantly soft. In fact, I would guess that the light was the only reason for stopping to take the picture. Otherwise there's no main subject or object in the photo for which to direct the attention of the viewer. My eye has no place to land. Of course, that's not uncommon in landscape photography. However, some are better than others at moving the viewer's eye around through the scene... typically created from lines, or the arrangement of elements that give the illusion of depth. Everything is on a flat horizontal plane in this image.
