Besides more obvious things like graying of the hair and wrinkles, one of the most prominent indicators of age in a person is skin texture, which tends to get more weathered in appearance with increased years, and thus, making it a bit tauter and smoother helps to restore the look of youthful vibrance. Of course, with any retouching technique, particularly one that performs such extreme manipulations like this, it is really easy to go overboard. It is generally better to err on the side of being a bit conservative with your adjustments to avoid a final result that looks noticeably artificial. I like to step away from the computer once I am done with an edit and return to evaluate the image with a fresh set of eyes one more time before I export it.
